The file work is unique to each knife making any knife you get from Fontenille-Pataud a one-of-a-kind work of art.
They produce the finest Laguiole knife we have seen with an eye for detail and aesthetic form that make these knives something very special. Contrary to popular belief the word "Laguiole" is not a brand-name. It is the name of a small village in the Aveyron region which shares its name with a traditional style of knife.
Many knife companies use the term "Laguiole "as if it were a brand name, trying to use the history of the truly fine Laguiole knives to bolster their products. Many of these companies are not even French! There are a few fine French makers who make a knife that has the style, materials and hand crafted quality that can legitimately use the term Laguiole.
Besides the more traditional Laguiole style knives, Fontenille-Pataud produces several types of specialty knives that are absolutely unique to what we see in the United States.
The Corsican Vendetta knife is a striking knife that has excellent heft. The back-spring has hand file-work and the handle has a unique shape that I have never seen on any other knife. The blade is deeply stamped with the Vendetta logo.
he Yssingeaux style knives are a medium size work knife with a rounded handle that just feels good to hold. The back-spring has the trademark hand file work and a round accent of mother of pearl on the bolster.
Aurillac knives are a traditional sheppard knife that have a comfortable, ergonomic handle and laurel leaf blade. They also feature file work on the back spring.
